Let’s add some flavor into our lives. Go ahead, cook some mouth watering, delicious, and exciting new dishes.This Mahi Mahi dish is absolutely scrumpious.
2 8 oz Mahi Mahi
1 Fresh Avocado
4 oz. Fresh diced Tomato
8 oz. Spinach
1 Tsp. Minced Garlic
Ingredients for Lemon Butter:
1/2 cup of white wine
3 1/2 whole lemons peeled and cut in half.
11/2 teaspoon salt
1 teaspoon white pepper
11/2 cup heavy cream
1 pound of non salt butter sticks (soft)
Heat pan with 1 tablespoon of oil and add spinach, garlic, tomatoes and 10 pieces of Ritz’s crackers (crumbles). Cook for about 2 minutes and set aside.Cut the Mahi on top in an X shape. Stuff the fish with spinach and tomato from above. Sprinkle a little salt and black pepper (maybe a little cayenne pepper) and insert in the oven at 350F for 15-20 minutes.
Heat pan on high and add the lemons and white wine. Reduce about half way and then add the heavy cream, salt, and white pepper. Make sure you whisk consistently when placing heavy cream to pan. Simmer for about 5 minutes until boiling has occured. Cut the butter into small cubes and add it to the pan slowly. Wisk until butter has all melted. Make sure the heat is on low when adding butter. Immediately remove from pan and strain into a container.
Remove the Mahi when finished and place it on the plate. Now drizzle the Lemon butter on top of the fish. Slice the avocados and tomato and throw them on top of the fish. Enjoy with some rice and steamed vegetables. You may also add some shrimp or crab on the topping.
Notes: Make sure the heavy cream is boiling when adding butter. Wisk until the butter has melted completely then remove from heat immediately.
